Time to get in the garden to make this Swedish Meatball recipe on the Frontier Stove.
A bit of a strange week this week with the children of school due to illness I only managed to get in the garden.
I’ve so many things planned and things that need doing it all had to be put on hold.
I’ve written and posted many times about the frontier stove and love using it.
It is so versatile it can be used on camping trips, on the beach or like this in the back garden.
I have had this recipe idea in my head since I participated in the Fjällräven Classic in Sweden in 2017.
At one of the stops I think it was Sälka we where treated to a Reindeer Souvla
This was basically a flat bread with potato puree, smoked reindeer meat and lingonberry sauce.
It was absolutely fantastic and I’ve been thinking of changing this recipe slightly using ingredients that anyone can get hold of.
Swedish Meatball recipe on the Frontier Stove.
- 1 x fistful of Pork & Beef Mince
- 1 x Egg
- Fresh Dill
- Half a diced onion
- Single Cream
- 1 x large potato
- 1 x Knob of butter
- Oil for frying
- Lingonberry or Cranberry Sauce
- Salt & Pepper
- Tortilla Bread (or similar)
First add some cream into roughly half a fist of breadcrumbs and mix to make a paste.
Add onion and a good amount of dill into the meat.
Add egg, salt & pepper and breadcrumb paste into meat and mix throughly (you made need to add a little more breadcrumbs to make a stiff mixture.
Peel potato, add a little salt and boil.
Make small golf ball meatballs.
Heat oil in frying pan (here i’ve used the up turned lid of a dutch oven.
Gently fry meatball until golden and cooked through.
Drain potato and add dill, salt & pepper and butter and mash into puree.
Spread Puree onto flat bread, add meatballs and top with cranberry sauce.
Wrap and eat.
