Here’s another Omnia Oven recipe: Jerky Bread. This one is a take on a traditional South African dish served alongside grilled meat on a Braii.
The actual recipe uses biltong which is an air dried meat. This recipe i’m utilising some game jerky crumble by Renjer.
If you’ve ever made jerky you’ll realise that there can be a bit of waste during the cutting process especially if you are producing jerky on a commercial basis.
What Renjer have done to try and limit waste and bag up the crumbs. The jerky crumble is a byproduct production therefore making the process become zero waste.
This crumb is just perfect for this recipe.
The recipe is really easy and don’t worry if you haven’t got a Omnia Oven. It is just as easy to make in a Dutch Oven, Reflector Oven or at home.
Omnia Oven Recipe: Bread.
Ingredients.
500g Bread Flour.
100g Cheese (I used a smoked Cheddar).
300ml lukewarm water.
2 tbl spoons of dried yeast.
1 pinch of salt.
10ml Oil.
1 bag of Zero Waste Jerky (I used Smoked Elk in this recipe).
1 small tub of cream cheese.
(Optional fresh garlic / herbs of you choice).
Method:
- Grate the cheese into a bowl and add the flour and salt.
- Add the dried yeast and half of the water and start to mix (adding the rest of the water as you mix),
- Need the dough, coat in a little oil cover in a damp cloth and let it stand (so the yeast can do its bit).
- (I left the dough overnight)
- Flour your surface and break a piece of the dough of and roll out flat.
- Spread over the cream cheese, covering all of the dough and add any extra toppings (like garlic or herbs).
- Sprinkle the zero waste jerky over the cheese removing any large bits and eating them as you go.
- Then starting from the bottom, roll the dough over to make a kind of Swiss roll.
- Squeeze the ends together (to stop any filling leaking)
- Oil up the silicone tray for the omnia (or Dutch Oven).
- Cut the dough roll into about 3cm pieces and lay (side up) in your baking tray.
- Repeat if needed to fill up you tin.

Once you have filled up the silicone tray with your Jerky scrolls, turn on your heat and heat up the oven.
After 10 minutes turn the heat right down and place the silicone mould into the oven for around 10 minutes. (This will allow the dough to rise especially if it is a cold day).
Once your 10 minutes is up turn the heat up full and cook between 20 & 30 minutes (depending on the size of the scrolls).
Don’t be tempted to keep lifting the lid to see how they are going as this will dissipate the heat from the oven.
Once your time is up take out the silicone mould (gloves may be needed as the oven can get really hot) and serve with a good coffee or along side some grilled meats.
